Josaku is white #2 steel blade, made for professionals with affordable price.
DEBA = to butcher and fillet whole fish. Although many chefs use this knife on meat as well, this knife is not made for cutting large bones so please do not use like cleavers.
*Please note that this is a high-carbon knife and it can rust quickly. Wipe with a dry towel when you finish using. To keep in shelf, wiping with pure oil is recommended.
